Various warnings from doctors notwithstanding, we humans have been devouring red meat for a long, long time. In fact scientists have identified 2.6 million year-old animal bone fossils with butchery marks. Somehow, in spite of our instinctual love of red meat, we managed to evolve anyway. That’s why, at Washington Market, our deli features delectable cuts from Mike’s Meats. Mouthwatering and aged … although not until it turns blue. Or green.
